Real Events, Real Stories: A Look at Our Favorite Sweetgrass Hall Moments

Every February, Black History Month serves as a time to recognize and honor the strength, resilience, and contributions of Black people throughout history. What began as a weeklong celebration in 1926, thanks to historian Carter G. Woodson, has grown into a month dedicated to amplifying the achievements and voices that have shaped our world. More than just a reflection on the past, Black History Month is a celebration of culture, creativity, and the ongoing pursuit of progress. Black history is a story of ingenuity, perseverance, and cultural richness that extends across every aspect of life. It is found in the words of poets like Maya Angelou and Langston Hughes, whose powerful verses have preserved histories and sparked movements. It is seen in the innovations of Black scientists like Dr. Marie Maynard Daly, the first Black woman to earn a Ph.D. in chemistry, and entrepreneurs like Madam C.J. Walker, who built a beauty empire and became one of the first female self-made millionaires in America. It thrives in the music of legends like Duke Ellington and Nina Simone, the art of Jean-Michel Basquiat, and the fashion influence of Ann Lowe, who designed Jacqueline Kennedy’s wedding dress, shaping global trends and defining generations. And, of course, it lives in the traditions passed down through families—whether in the storytelling of Toni Morrison, the craftsmanship of artisans like the Gullah sweetgrass basket weavers, or the deep sense of community that has sustained and uplifted Black voices through adversity and triumph. This year at Carolima’s, we proudly contributed to the celebration of Black History Month through meaningful events that honored our heritage and strengthened our community. Our 3rd Annual Taste of Gullah Geechee was a tremendous success, allowing us to showcase and celebrate Gullah cuisine and culture in our new location, Sweetgrass Hall . We also hosted Business & Brews , an event dedicated to fostering connections among African American men in business, creating opportunities for friendship and partnership. Additionally, we engaged with the next generation by visiting Liberty Hall Academy to speak with students about our industry and entrepreneurial journey. They then visited Carolima’s for a tour of our building and enjoyed a traditional Gullah Southern meal. To close out the month, we are visiting the School of the Arts to continue inspiring students by discussing entrepreneurship, building a brick-and-mortar business, and the many opportunities within the hospitality industry. As Black History Month comes to a close, I hope it has been a time of learning, appreciation, and celebration. But honoring Black history isn’t just for February—it’s something to recognize and uplift year-round. Whether through food, storytelling, or supporting Black-owned businesses, there are countless ways to celebrate and acknowledge these contributions every day. At Carolima’s, we are committed to preserving and sharing the rich culinary traditions of the Gullah Geechee people and the Black chefs who have paved the way. It’s a privilege to be part of this work, and I look forward to continuing to learn, celebrate, and support this legacy in meaningful ways.

African American women chefs have shaped the culinary world in ways that continue to influence kitchens across America. From preserving Southern traditions to breaking barriers in fine dining, these trailblazers have paved the way for generations to come. One of the most revered figures in Southern cuisine, Edna Lewis, was a pioneer in elevating farm-to-table cooking before it was trendy. She spent more than 75 years in the culinary world, authored three celebrated cookbooks, and won multiple James Beard Awards. Her book In Pursuit of Flavor remains a testament to her legacy and is even featured at the Smithsonian’s National Museum of African American History and Culture. Lewis proved that Southern food deserved a seat at the table alongside haute cuisine, and her impact is still felt today. Another legend, Leah Chase, affectionately known as the Queen of Creole Cuisine, made history as the executive chef and co-owner of Dooky Chase’s Restaurant in New Orleans. More than just a restaurant, it became a gathering place for civil rights activists when Black diners were denied entry elsewhere. Chase was an acclaimed cookbook author and a mentor to countless chefs, even cooking for presidents like George W. Bush and Barack Obama. Though she passed in 2019, her restaurant continues to thrive, preserving her rich culinary heritage. For a modern-day powerhouse, look no further than Carla Hall, whose career spans television, cookbooks, and advocacy for Black culinary traditions. She’s been a finalist on Top Chef, co-hosted The Chew, and continues to inspire through her cookbooks and television appearances. Her book Carla Hall’s Soul Food: Everyday and Celebration received an NAACP Image Award nomination, further cementing her place in the culinary world. Carla Hall is the host of Chasing Flavor on HBO, and our very own Sameka M. Jenkins had the chance to join her on the show, sharing her expertise on shrimp and grits. It was such a proud moment for Carolima’s, showcasing our commitment to authentic Lowcountry cuisine. These Black women in the culinary world aren’t just cooking; they’re making history and inspiring generations with every dish they create. And to bring it back home, Mrs. Emily Meggett, a beloved matriarch of Edisto Island, is widely regarded as one of the most influential voices in preserving and sharing the rich culinary traditions of the Gullah Geechee culture. Through her James Beard-nominated cookbook, Gullah Geechee Home Cooking: Recipes from the Matriarch of Edisto Island, she brought the soulful, flavorful dishes of her heritage to the forefront of American cuisine. As the first Gullah Geechee cookbook published by a major American publisher, this work solidified Mrs. Emily as a guardian of Gullah Geechee foodways, capturing the essence of a culture that has shaped the South for generations. Mrs. Emily has also mentored and educated a future generation of Gullah Geechee chefs and home cooks, such as BJ Dennis and Amethyst Ganaway, both of whom have referenced her as central to their culinary philosophy and development as guardians of Gullah Geechee heritage and foodways. Here at Carolima’s, we are proud to use Mrs. Emily’s recipes, as a Gullah Geechee catering company committed to honoring the rich culinary traditions of the Lowcountry. Mrs. Emily’s contributions, along with those of the other amazing women mentioned here, are a powerful testament to the rich legacy of Black women who have been feeding people, innovating in the kitchen, and redefining American food for generations.

When we talk about American cuisine, we often forget to credit the Gullah Geechee culture for its deep influence on the food we eat today. Rooted in West African traditions, Gullah Geechee foodways were built on adaptability, creativity, and resilience. Forcibly removed Africans brought to the Lowcountry were specifically chosen for their expertise in growing rice, a skill that shaped Southern agriculture and cuisine. Their knowledge not only made rice a staple of the region but also laid the foundation for countless one-pot meals designed to nourish and sustain. Gullah Geechee cooking reflects the ingenuity of a people who made the most of what they had. With limited tools, they developed techniques like roasting meat above the pot, baking cornbread with hot coals, and even cooking yams directly in the ashes. Ingredients like seafood, fresh vegetables, and peanuts—brought from Africa and known as groundnuts or earthnuts—became central to their cuisine. Community peanut boilings turned a simple, nutritious snack into a social event, a tradition that still exists in the South today. Beyond just food, Gullah Geechee contributions shaped the communal dining culture of America. Their one-pot meals, such as okra purloo(as pictured above), okra soup, collard greens, and pot meat (smoked neck bones, smoked turkey, or pig tails), set the stage for the hearty, comforting dishes we now associate with Southern cooking. The influence of these flavors stretches far beyond the Lowcountry, appearing in kitchens across the country. Every time we enjoy a plate of rice and seafood, a bowl of stewed greens, or a handful of boiled peanuts, we’re tasting history—one that deserves to be acknowledged and celebrated.

As the New Year approaches, the traditions of the Gullah Geechee community offer a flavorful way to welcome new beginnings. These customs, deeply rooted in heritage, celebrate the promise of prosperity and connection through food and family. At the center of the celebration is Hoppin’ John, a dish made with black-eyed peas, rice, and smoked pork. The field peas symbolize coins, while the rice represents abundance—both offering a wish for prosperity in the year ahead. It’s a dish that’s as flavorful as it is meaningful, bringing good fortune to the table with each bite. Collard greens are another essential part of the New Year’s feast. Slow-cooked with smoked meat, their deep green color is said to bring wealth, echoing the hue of dollar bills. Together with Hoppin’ John, they create a powerful, tradition-filled pairing that’s not only tasty but full of significance. Pork Roast also makes an appearance, representing progress and good fortune in the Gullah Geechee tradition. The pig is seen as a symbol of rooting forward, and the slow-roasted pork is a delicious centerpiece for the meal. The tender meat, seasoned with a perfect blend of spices, adds a hearty touch to the table, rounding out the celebration with savory flavor.
